I can't eat wheat gluten (especially in concentrated form!) so I substituted corn masa, which, when steamed, holds together really well. We have been enjoying these sliced on sandwiches and will try them sliced on pizza soon. Really good!

This is great! I haven't worked with vital wheat gluten yet. Excited to give this a try! I love anything with fennel :)
