What’s Brand New Vegan?
Brand New Vegan started as a recipe blog in 2013 as I began learning what it meant to become a “brand new” vegan.
And it completely changed my world.
If you subscribe to my newsletter, you’ll get all the delicious meals I have developed over the years, and I don’t mean just the salads and sprouts either. But the comfort foods we CRAVE, like chili, tacos, biscuits & gravy, and even a veggie-loaded pizza on a cold winter night.
You’ll also get cookbook news, rants about my family (who still think I’m weird), healthy living updates, other plant-based news, and even a restaurant rec every now and then.
In case you’re wondering, I’m primarily plant-based for my health. And I truly believe that decision saved my life in 2020 as I found myself in the hospital suffering from a stroke. One doctor told me most stroke patients aren’t nearly as lucky as I was because I walked out of that room the next day with zero residual effects.
I use real whole-food ingredients, nothing overly processed, and certainly none of that Ultra Processed stuff that makes up 95% of our grocery stores.
Most of the ingredients I use are probably already in your pantry, and by the way, I’m also 100% oil-free.
So many people think vegan food is boring, and I mean to prove them wrong. Plant-based eating can be every bit as delicious as the comfort foods we had growing up, only healthier by a long shot.

Who am I?
I’m Chuck Underwood, 61 years old, a food blogger, whole-food plant-based advocate, and soon-to-be cookbook author. I’m known for my “down home” style of cooking - mainly the comfort foods we used to love and thought we’d have to give up.
When I became vegan I thought to myself,
“There ain’t no way in hell I’m going to eat any of that hippy vegan stuff”
Instead, I set out to make the foods “I” wanted to eat, like chili, tacos, and the soup beans ‘n cornbread my mama used to make. So I put on an apron, grabbed a knife, and started cooking.
I’m also a graduate of T. Colin Campbell’s Plant-Based Nutrition Course and often speak at various plant-based events in my hometown of Portland, OR.
I follow all of the well-known plant-based doctors such as Dr. John McDougall, Dr, Caldwell Esselstyn, and Dr. Neal Barnard. I’ve had the pleasure of meeting many of them and I can tell you that they definitely know what they are talking about.
I have lost weight, lowered my blood pressure, and survived a stroke since changing my diet. And have seen some amazing transformations in the people who follow me, including my wife. I also take zero medications.
